Mediterranean Tomato and Bacon Soup

Try this delicious soup recipe...
155g dried lima beans,soaked overnight
40ml rapeseed oil
120g onions, finely chopped
120g carrots, finely chopped
60g smoked bacon,finely chopped
130g tomato puree
1/2 teaspoon smokeddulce paprika
20g sun dried tomatoes,soaked
1 teaspoon caster sugar
100g canned plum tomatoes,roughly chopped
244ml water
Salt and coarsely groundblack pepper

Drain the lima beans, add enough fresh water to cover and cook gently for 20 minutes until softened. Heat the pan and add half the oil. Add onions, carrots andsmoked bacon and cook for 5 minutes. Stir in tomato puree, cook for 5 minutes then add smokedpaprika, sun dried tomatoes, sugar and tomatoes cooking for a further 5 minutes. Pour in water, softened lima beans and simmer for a further10 minutes. Season well and finish with the remainder of the oil.
